Briar, the latest release from our barrel cellar, will be hitting the tasting room on Saturday, May 5th. Starting as a light ale soured and fermented in stainless with blackberries and raspberries, Briar was further aged in neutral oak barrels with Brettanomyces. Pouring a rich red color, the nose opens with the berries, finishing with an underlying richness and mild funk from the Brett. The fruit flavors carry through on the palate with a roundness from the oak, but finishing light and tart.
Over time, the fruit will fade, but the funkiness of the Brettanomyces will continue to mature, making this a beer that will continue to evolve and change. Enjoy this beer on its own, with lightly funky cheeses such as Brie, or as an accompaniment with roast chicken or pork.
